BEST OF LUCK to George and Rachel tomorrow at the final of this year's "Apprentice Chef" (held in Tralee IT). They are George s creating a dish of Roast lion of Local Lamb with a pine nut and thyme crust, red currant jus, fondant potato, vine roasted tomatoes, beet, baby carrot and salsa Verde while Rachel will be preparing a dish of Pan-fried fillet of trout with a creamy spinach and bacon sauce, served on a bed of asparagus and wholegrain rice.
