Ciaran Mc Gregor and Charlotte Hall Form 4 took part in the regionals of the competition" Apprentice Chef" which is sponsored by Taste of Kerry and Just Cooking Cookery School on Friday 27th of March. This is a competition focused on developing the culinary skills of young people and utilizing good mood and locally produced food.
They travelled to Tralee with their Home Economics Teacher Ms. Niamh Lawlor to take part in the cook off in I.T. Tralee Hotel and Catering Department.
They both produced spectacular dishes on the day. Ciaran prepared East Ferry Chicken stuffed with Ballycotton smoked salmon wrapped in spinach with a celeriac purée on a bed of wild mushrooms with roasted tomatoes served with sweet potato gnocchi. Charlotteprepared Pan fried monk fish with a saffron sauce, caramelized baby onions, cabbage and pancetta. Served with potato rosti.
From the regional final Charlotte was was then selected to be one of the lucky final 16 out of 550 students that have taken part in this project to go forward to the final stage.
A team of Chefs judged and aided the students throughout the day and mentored then in preparation for the day, These were Chef Mark Doe, Chef Mark Murphy and Chef Simon Regan.
Thanks to Ms Lawlor and Chef Rory Graham for their mentoring so far and best wishes to Charlotte in the Upcoming Final.
