This year again we have qualified for the Apprentice Chef Project. A small number of schools from Munster have been selected to go forward to the first round of workshops. From this 2 students from each school will be selected to go forward to the cook off stages early next year.
This Thursday the 11th, 15 students will travel to Tralee IT to take part in the first stage of the Apprentice Chef Project. This is a competition focused on developing the culinary skills of young people and utilizing good mood and locally produced food.
The Day will be spent touring the facilities in the Hotel and Catering department and attending a talk on Nutrition/Good Mood Foods and a series of cookery demonstrations.
Last year Reidin O Sullivan, Form 5, reached the final of this competition. She prepared, cooked and served a dish of Local Lamb Rump served with Turnip Puree, Banana Shallots, Parsnip Crisps with a sweet red wine and rosemary jus served with seasonal veg of sweet potato, carrots and green beans.
