Well done to Niall and Doireann who participated in this year's Apprentice Chef competition yesterday in IT Tralee. (Finalists will be announced in two weeks time). Niall cooked Supreme of chicken with pomme purée, Savoy cabbage and bacon lardons spring roll with a red wine jus. While Doireann cooked Pan fried John Dory served with a lemon and dill butter sauce, scallops served on a bed of pea veloute and bacon crumb, samphire with duchess potato. Both sound delicious!
